It Hurts So Good

Hey All! Another busy night of tutoring yesterday, so I can’t wait until my students are on break. Even though I work full-time, not having to tutor makes me feel like I’m on vacation, too. More time to work out, cook, and catch up on blogs

Since I needed to use up the green chili that I bought, I decided to try to attempt a soup/chowder/chili. I wish that soup was more photogenic, but it definitely is not.

Green Chili Soup

In addition to the green chili, I added the following:

  • low sodium chicken broth
  • grilled chicken (cut into bite-size pieces)
  • no salt added black beans
  • sweet summer corn
  • extra can of fire roasted chili
  • white hominy
  • 1 small onion
  • chili powder
  • sea salt
  • garlic powder
  • splash of lemon juice (I didn’t have lime)

I had no idea how this was going to turn out, but I put all of the things that I usually like in a chili soup, and it turned out great! I would have been really sad if it was gross because I would have wasted  a great jar of green chili.

I’ve been reading about Annie’s Goddess dressing on other blogs for some time now, so I finally picked up a bottle. I must say, it tasted like thinned out hummus (or am I just crazy?). I love hummus, so I really enjoy the dressing, but my roommate said she would probably stay away lol. For lunch today, I packed up a 50/50 salad with chicken, goat cheese, and a side of dressing. Can’t wait!

Exercise

I am still pretty sore from TRX on Wednesday! We had a sub for class, but I still enjoyed the workout despite the workout change. She set up 10 different stations, and we stayed at each station for 3, 30-second segments.

  • TRX planks or TRX mountain climbers
  • TRX push-ups
  • TRX high arm squats
  • resistance band tricep pull-downs
  • TRX body rows
  • bicycle crunches
  • High intensity cardio of choice (I did burpees, jumping side lunges, and jump squats)
  • medicine ball slams
  • weighted bar lunges
  • jump rope

Phew! After our 3 rounds at each station, we headed to another room to complete 6×100 meter sprints. The last time I did sprints in TRX, I literally almost threw up. This time, I finished strong and felt like I could complete a 5 mile run afterwards! I guess all this running is really paying off. I was also happy to do sprints because I’ve been wanting to incorporate some speed work into my running, so it worked out.

Since I haven’t done an actual run since Sunday’s 9-miler, I’m antsy to get outside after work to hit the pavement. It’s supposed to be a high of 60 today, with temps dropping to the low-40s tomorrow, so hopefully I can get in a solid 4-5 miles before it gets dark.

Be Thankful Challenge

Today, I am thankful for airplanes. Why? One of my close college friends is flying in tonight! She’ll be here through Thanksgiving to spend time with her family, but she’ll be hanging out with me for a couple of days first. Despite her moving for work, we’ve stayed close and in touch, so I can’t wait to see her 🙂
