Day and Night

Happy Holidays! I hope that everyone is finally getting a day off to enjoy this Christmas weekend with family even if you don’t celebrate Christmas.

Here’s a semi-condensed version of my MIA-days:


This was quite possibly the longest day of work in my life. All of my coworkers and I didn’t have much to do because so many of our accounts had people off on extended holidays. So, we listened to a lot of Christmas music and bee-lined out of the office as frequently as possible, despite the overload of snow.


For lunch, we ordered (fake) Chinese, which I always regret later because it always ends up so greasy, and I can never eat more than half.


Then I was determined to give myself a sugar crash when our office catered giant platters of cookies. Delicious cookies. I had chocolate chip, peanut butter, and a brownie. I was able to polish off the cookies, but the brownie was too rich, and I already felt slightly sick lol. The cookies were the size of my hands.


Immediately after work, I went to Japoix to try to catch a friend from out of town before going home to throw Christmas presents in my car to head down to Colorado Springs to my mom’s place. Turns out, she wasn’t going to be showing up  until way later, so I didn’t get to see her 😦 It’s okay though; I’ll be staying with her in February when I head to LA for my first half marathon…eek!

On the way down to Colorado Springs, the highways were cleaned up enough, so I made a detour to the outlet mall in Castle Rock to hit up the Under Armour and Nike stores. I was really hoping for some compression tights to be on sale, but no luck. I did end up with 2 pairs of new Nike Tempo shorts though, which are always needed.


After a well-rested evening, I woke up to hit up the gym for a 5 mile tempo run, and it was tough. I was mentally not into the run AT ALL, but I stuck it through and got it done.

Then I headed home for a yummy lunch. One of my favorite Korean soups of all time is 육개장 (yuk gae jang). It’s a spicy soup made with shredded beef and an assortment of vegetables. My mom uses cabbage, asparagus, onion, and green onion.


My mom boils the beef and bones for a day before, skims out all of the fat, and then cooks the soup, resulting in a deep, savory broth. It’s served with a side of rice and other small side dishes, but I kept mine simple with just the rice.

Then I had to shower quickly and head to the car shop. My climate control system has been broken since May, which means I’ve been stuck in a sauna on crack during the summer, and have been a popsicle during this winter. I personally haven’t cared that much because I’m planning on buying a new car next year, but my mom insisted I go.

I planned on doing some shopping and visiting friends afterward before dinner with my family. Then, I was planning on heading to downtown Colorado Springs to grab a drink with my friend, so I planned a good day-to-night outfit.


It looks casual enough to wear out, but with some darker eye make-up, makes for a cute bar outfit, too.

I’m in love with this bag, the blue color is great, and the hardware details go well with so may things.

Anyway, so I ended up being at the shop for four and a half hours! I finished The Hunger Games while I was there (highly recommend), read all of their magazines, and still had nothing to do for an hour, so I chatted it up with the mechanic’s wife. Needless to say, I didn’t get much done because I was already running late to dinner, BUT my heater is working! Yay!

Downtown Colorado Springs is definitely not downtown Denver, but it was something to do. On the plus side, while I was out, I ran into seven different people from high school! I haven’t seen these people from between 2000-2008, so it was really good to be able to catch up and see how people are doing years later.

I hope that your weekend is off to a great start. There’s not much on my agenda for today, but I’ll be doing a 4 mile run with my sister and her boyfriend, buying one last gift for her boyfriend, getting some final groceries with my mom, and attempting to sew myself a skirt (unless I get my hands on book 2 of the Hunger Games series!).  Until tomorrow!

Long Run Sundays: Winter Blues + Awards

Happy snowy Sunday! It has been an absolutely freezing past 5 days, and I’m not adjusting very well. It’s been an unseasonably warm winter so far here in CO, but winter is here in full force. I’m not looking forward to my commute tomorrow morning.

Birthday Bash

Since my birthday fell on a Wednesday this year, I had dinner with some of my closest friends on the day of and decided to save the bigger celebration for yesterday. I almost had to cancel because of the snow, but it finally stopped. I spent the majority of my night at Japoix since it’s such a chill place, they have free garage parking, and the happy hour prices are awesome.

It was really good to see a lot of my other friends since I don’t really go out as frequently anymore. They took full advantage of the situation, and ensured I got blitzed out of my mind. That makes me sound like an alchy, but I normally only have 2-3 drinks max.

Long Run Sunday…

did not happen because I finished it yesterday 🙂 I knew I would probably not be in any condition to run today, so I stuck to my word and finished my 9 mile run a day ahead of schedule.

I probably looked either really hardcore or like a total nut case (probably a little of both) because my run started out around 22 degrees and ended around 12 degrees. This is the first time I had to use my thermal Nike running tights, and I definitely should have worn another layer on top of it. On top I wore a DriFit tank, thermal long-sleeve, and a full zip top. It was also my first time having to run with a hat and gloves…brrrr.

The run went very slowly because there was snow and ice on the sidewalks. It was probably not the smartest idea to run outdoors, but I would have stabbed my eye if I had to do the entire thing on a treadmill. I took a 4 mile route to the gym, completed 4.5 on a treadmill, and then ran the last half mile home. While I managed to not break a leg or slip, I got my first minor running injury 😦 Because the zipper on the backs of my running tights didn’t have a cover, I got blisters. One of which was bleeding while I was on the treadmill. The person behind me must have been grossed out lol.


I did not get in the 4 mile run that I was supposed to do today. Oh well, things happen.


Since the alums from my sorority don’t get to see each other nearly as often as we did during undergrad, we started a monthly book club as an excuse to eat and chat. Thao hosted this month’s book club, and she made us homemade pho! It was freakin delicious. Be jealous.

I just finished making my last batch of cookies for the Food Blogger Cookie Swap that I have to mail out tomorrow, so I hope they turned out good. I am not a baker for a very good reason lol. I’ll be sure to post up pictures and the recipe when we all mass post them later in the month.

I’m supposed to share 7 random facts about myself and then select other bloggers I want to know more about, so here we go.

Fun Facts
1) I always have to wash my hands before I take a shower. It makes absolutely no logical sense as to why I need to do this, but I do. ALWAYS.
2) I’ve only done the splits once in my entire life. I was in elementary school and rollerblading on ice. Yeah, I was a special kid.
3) I was valedictorian in high school and did very average in undergrad. Way to drop the ball.
4) I’m one of the least flexible people in the world. I cannot even touch my toes, and I’m slowly working on it.
5) I never knew that pineapples grew from the planted tops of other pineapples until I went to the Dole plantation in Hawaii.
6) When I eat, I have to eat one type of thing at a time. If I order a steak with mashed potatoes and veggies. I have to eat one of these things first and then start on something else.
7)  I picture myself dying at least 10 times a day. No, I’m not suicidal, nor do I hate my life. Depending on what I’m doing, I could imagine myself getting into a million types of car accidents, getting hit by a car while crossing the street, having a crazy man shoot me as I’m walking down the street, etc. The funny thing is, none of these thoughts scare me or make me uber-vigilant. It’s just part of my “normal” thought process…if you choose to stop reading my blog, I understand hahaha 😛

I didn’t get a chance to post last night because the kids that I tutor ended up needing quite a bit of help, so I didn’t get home until late. College application season is fully underway for these guys, so I’ll probably be busy for next month or so.

After I got home, I headed over to Japoix with Quynh to meet up with Jennifer one last time. She’s headed to California tonight, but it won’t be the last time she hears from me 🙂

Japoix is my favorite place to kick back and have a few drinks. It’s a Japanese-French steakhouse, but they have a really nice lounge in the back that offers their full menu, excellent happy hour items, and a low-key atmosphere. Their food is really good, and Lawrence, the owner, always ensures we have a good time.

Rock n Roll Time

I’m so excited and nervous to say this, so here it goes. I just registered for the Rock n Roll Portland half marathon!

It’s not until May 20, 2012, so I have tons of time to prepare. I’m just happy that, at this point, I know that I can run this (slowly) since I’ve completed 8 miles fairly comfortably. It’s my very first half marathon, thanks to Thao! I’ll be running the race with her and a few other friends.

Portland sounded like a great choice because it’s not a place we would really visit on a leisurely vacation, but we do want to go. Might as well run a race there and then take a few days to see some sights. Win-Win.

One point of potential “concern” is that it’s the inaugural event, which I read can either be great or subpar due to planning issues and unexpected glitches. Being that I’ve never run a half marathon (or any race at that) before, I have no clue what to expect, so I’m sure everything will seem perfectly normal to me. I’ll be too caught up in the moment.

Be Thankful Challenge

Yesterday, I was thankful to get some extra spending money from tutoring. You can never have enough spending money 😉 Today, I’m thankful for sales and discounts. $20 off of race fees? Sold!

I’ll be coming at you tomorrow with some great eats. I cannot wait for dinner!
